Salsa Verde!!!

Green tomato salsa , you’ve GOTTA try this1lb boiled/peeled green tomatoes3 garlic cloves1 Jalapeño pepper (remove seeds for less spice)1/2 onionJuice from one limeA handful of cilantro (stems included)Mix everything together in a food processor and enjoy with your favourite chips or as a topping for tacos!

Week 13 Recipe

1 acorn squash, 1/3 cup quinoa, 1 cup baby spinach, 1tbsp lemon juice, 1tbsp olive oil, pinch of sea salt, 3/4 cup chickpeas (rinsed and cooked), 1/4 cup feta cheeseCut the squash in half and remove the seeds, place in an oven preheated to 400f face down on parchment for 25-30mins. While the squash is cooking, cook the quinoa according to directions on packaging. When quinoa is done, fluff with a fork, add the spinach and cover allowing it to wilt. Add the lemon juice, olive oil, sea salt and chickpeas. Mix well.Remove the squash from the oven, fill it with the quinoa mixture and top with feta.

Week 7 Recipe

Wash and chop a head of cauliflower into bite sized pieces, add a couple tbsps of oil, paprika, cumin, chili powder and garlic powder. Bake in your oven at 400f for about 15 minutes (or until they reach desired crispiness). Toss in some Buffalo sauce when they come out for some added spice. Heat your black beans in a pot with a tbsp of oil, and season with salt, pepper, garlic powder, cumin and paprika. Wash and prepare your desired veggies for the taco. I like chopped cabbage, corn, cucumber, tomatoes, cooked broccoli, bell peppers and avocado of course. Assemble your tacos, add some chipotle mayo and ENJOY!

Week 5 Recipe

Sesame Chickpea Mason Jar Salad Try this recipe to use up the cucumber, carrot and cabbage you got this week! :)  2 tsps Soy Sauce  2 tsps Sesame Oil 2 tsps Maple Syrup 2 tsps Lime Juice 1/2 cup Chickpeas  1/4 Cucumber (diced) 1/2 Carrot (medium, cut into matchsticks) 1/2 stalk Green Onion 1 cup Green Cabbage (thinly chopped) Add all ingredients into a mason jar. Shake well before eating, pour into a bowl and enjoy for a quick and easy lunch on the go!
